This is what I had today for lunch today here in New Orleans. We went to a great little restaurant down from our hotel. It was called The Blind Pelican. It was incredible. We sat on a balcony with ceiling fans going, a breeze and people watching. It was perfect. Their menu was not huge but what was on it was incredible. Hubby got a burger that was nothing short of just plain insane. It looked like something out of a magazine. Just amazing!!!! I got something a little different. An Adult Grilled Cheese and fries. My sweet Little Man eats way to many grilled cheese and missing him so much I chose to order one. It was fabulous!!!!!! So, I chose to share with you what was one it. I'm going to work on a "Transformation" version when I get home. I'll keep you posted on that. Here is what was on my sandwich.

Sliced Tomato
Sliced Bacon(crispy)

Few sliced red onions
Grilled to perfection!!!!!!!!
It was fantastic!!!! I don't eat sliced tomato on my sandwiches. This was incredible! I just loved it!!!!!! I will for sure be making these at home!!!! I even thing I could add a few things to my Little Man's favorite sandwich. Thanks to The Blind Pelican for such an awesome experience!!!!!

Bleu Apple Salad
This was absolutely incredible tonight at dinner. We ate at Copelands and it was fantastic!!!!!!!!!

Tara- Week One!!!!!!
I got Tara's update today. I am so excited for her!!!! SHE ROCKS!!!!!!! I have cut and pasted her entry. ENCOURAGE HER WITH YOUR COMMENTS!!!!!!! SO EXCITED!!!!!!
Strengths
I drank my water all days but one.
I survived the weekend at my in-laws without falling completely off the wagon and even got a run in
I did not listen to that voice telling me to give up, who was I kidding
I got some clothes from a friend that are a size smaller.
My bras are too big (not sure if Troy would agree this is a good thing).
Weakness
I want to weigh in weekly. Still got to talk to Pam about that one.
Wow I am a little surprised that the strengths outweigh the weaknesses. It felt like a long hard week with many obstacles. The first 3 days were the hardest because I was craving sugar. Every time I wanted something I shouldn’t have I prayed for starving people in the world. Perspective. I have been praying for eternal perspective. This isn’t just about me. This is about my little girl, who is a spitting image of me. This is about being a temple of God. This is about no sin being between me and my God. This is about me fully surrendering every aspect, even chocolate chip cookies after a hard day, to Him. I am putting one foot in front of the other and taking one choice at a time.
I am just thrilled!!!!!! Very proud!!!!!!! ENCOURAGEMENT!!!!!!!! TARA-----YOU ARE AWESOME!!!!

Week One
So I just started the first week of the plan here is a

Chicken Salad
This is the salad that I had the other night at Outback. It was incredible. I am including estimates on the amounts. Not sure about calories and fat grams and all of those details. I'm sure that if you wanted to sit and figure them out, it would not be that hard because it is so simple. So here you go....
Chicken Salad
Romaine lettuce
Baby spinach leaves
Radicchio lettuce
1/4 of granny smith apple sliced very thin
Feta cheese
Toasted walnuts
Balsamic Vinaigrette
That simple. It was INCREDIBLE!!!!!!! Sweet, salty, vinegar, crunchy, and just amazing!!!!! Great for these warm summer nights!!!!!!!

Pictures!!!!
Well, this could be a little tricky but I am determined. I posted the other day about "Shadows" and I am out to jump into every picture. Yes, I know that sounds crazy. I actually did it the other day at the mall. We were there doing some shopping and Kaleb wanted to ride the carousel and wanted me to jump on with him. Well, I gladly went not thinking anything about it. So, we got on the horse he wanted and I was standing next to him. My typical reaction when Bo says he wants to take a picture is to get as far away as possible to avoid being caught in the picture. Well.......this time, I stuck my face right in the midst of the picture. I was not going to back down on what I had posted for the whole world to read. I even posted the picture to prove it!!!!!!
So there you go. I DID IT!!!!! This is not the norm for me and totally steps out of my comfort zone but it was good!!!!!!!! He is so cute!!!!!!
I am in Mississippi for 2 nights. Very excited. I even mapped out my 4 mile run for the morning on the beach. There is something about sweat, salt water, sand and that gulf breeze. I can not wait til morning!!!!!!! It's gonna be awesome!!!!!!

Danielle's Cheesecake!
Well, how are things going with you? Are you sticking to whatever plan that you are flowing? Its amazing how things can get rolling and before you know it, things are changing. It's just awesome.
I'm excited that I have started to see changes. They are small but I'm aware and that is what makes all the difference in the world.
Yesterday I was feeling a bit overwhelmed and stressed. I posted on my Facebook page that I had some choices.
1. I can eat what is in the pantry.
2. I can go home and sit.
3. I can go and take a nap.
4. I can go to the gym.
5. I can leave my frustration on the equipment
6. I can destress with sweat.
Well, I had limited time so I chose to take the later. I went to the gym and killed it on the Cardio Climber. I didn't know I could sweat that much that fast. It was absolutely awesome!!!!! I felt better and it was great!!!!! I even slept better because of it.
I did want to share something from my friend Danielle. She is a master in the kitchen with her creations of all kinds of good for you sweets. She and her husband Adam are the owners of Team Genetics. You can find their link on the sidebar. I have eaten one of these and I can't wait to make a batch for home. Only problem is that I am afraid I will eat way to many of them...hahaha. So if you are looking for something special and a treat for yourself, try these!!!!!
Danielle's Cheesecake
2 cups nonfat cottage cheese
2oz fat free cream cheese
1/2 cup splenda
1 scoop vanilla whey protein powder
1 tbsp sugar free cheesecake pudding mix
1 tsp cinnamon
1 packet of unflavored gelatin (I use Knox brand)
1/2 tbsp lemon juice (or to taste)
1 tsp vanilla extract
1/2 cup boiling water
12 nilla wafers
In a food processor blend cottage cheese, cream cheese, protein powder, cinnamon, lemon juice, vanilla extract and pudding mix until smooth. May need to scrape the sides of the bowl once or twice and process again.
In a separate small bowl mix gelatin and splenda then add the boiling water. Stir until dissolved. Add the wet mix to the food processor and blend again.
Line a 12 muffin cup pan with foil muffin liners. Add 1 nilla wafer to the bottom of each muffin cup. Spoon cheesecake mixture into the muffin tins. You should be able to fill them almost to the top.
Place in fridge for 2 hours to set. You can freeze after if desired. I've tried them both ways and I definitely prefer them slightly frozen!
