New Foods
This past weekend was the weekend to try something new. I found a chocolate cake recipe that I wanted to try. I wanted to try without any box help. It's been years since I made a cake without a box. Kaleb is all about helping now so this was going to be fun and......messy. We had a blast making the cake and it was AWESOME!!!!!! We made it Saturday and I can bet that it is all gone now. Sunday I decided to bake bread. I was just in the mood. It was a beautiful loaf. Crunchy crust and soft on the inside. Hubby LOVED it!!!!!!!!
I will give you the bread recipe but the cake is from 100 days of real food blog/website. Totally loving it!!!!!!!! Found another one for a cake/bread that is next to try. I will keep you posted.

Changes and More Changes......
So I wrote about Amber the other day. She is still going strong. We are suppose to go running tomorrow and it will be interesting to see how many we have coming. We seem to have invited everyone we know. So much fun. Love challenging people!!!!!! We won't have a "Jillian" moment tomorrow because I don't want to scare anyone off. They won't come back. We will go slow and easy. It will be a blast!!!!!!!
Long conversation with Amber the other day while we were running and decided that I needed to change my profession....hahahahaha. I have a couple of friends that are paying money for different programs. I told them that the next time they choose to pay money, that I would be happy to take their money and tell them what they are hearing and I am sure that I would be a lot cheaper than what they are paying. I'm just amazed. I am so passionate about these things. I don't realize it until I get into a conversation with someone and hear myself talk.
HCG is the newest on the market. There is a sweet person at the hospital that is starting this the upcoming week. Shots and an extreme calorie cut to 500 calories a day for I think 2 weeks. I am sure my mouth hit the floor. I admit that I don't know a lot about HCG therapy. It just doesn't seem right to me for some reason. If you know more about this or have a link, please feel free to post it. I would love to read more about it.
Several people tried the Mexican Chicken that I posted and everyone so far has loved it. I love it when people tell me they tried it!!!!!! Just wonderful!!!!!!! Today, Kaleb and I made a chocolate cake. It's from the 100 Days of Real Food website. Her site is just amazing. So many ideas. I just love it!!!!!! It is incredible to see and read what all she has read and researched. I am just devouring it. The cake was very simple and very easy. Kaleb even licked the bowl. Yes, I let him lick the bowl. I did when I was little and I don't have an issue with that. We are going to frost it and make "Spider-Webs" on it. That will be a blast.
Still getting ready for October. I so can't wait. So very pumped up!!!!! Hubby and I are signed up for a 2 mile fun run the weekend prior to July 4th. Last time I ran a 9 minute mile. I might try again but I haven't made up my mind. Will have to see.

Did it!! Doing it!!!
Did It!!! Doing It!!!!
I am so excited about writing this post I could just bust a gut!!!!!!! I have this awesome friend at work named Amber. She makes me laugh. She keeps me awake. She is just a wonderful person to work with. Well, a few weeks ago, I think about 3 now, I challenged her to go and run/walk with me. The first time I mentioned it, she looked at me like I had completely lost my mind. She finally took me up on it. I was really nice. We walked the first half (1 mile) at a pretty good pace for walking and then on the way back, I challenged her to run for 1 minute. Well, she did it!!!!! She was still alive and we didn't need to call EMS. We went back to work the following week and she was very excited!!!!!!
I decided to challenge a few others at the hospital to come and go with us. Amber even told them that could do it! This past Sunday we were suppose to meet up with some others and well........they were all no-shows. Of course me in my "Jillian" frame of mind decided I would push/challenge her a bit. Off we went. Walked the first part just like we usually do and then we ran. We ran. We walked. We ran. We walked. We talked and chatted and laughed. She swears she will not eat pizza before we run again.....hahahaha! My only advice to her when we were done was that she needed to 1)drink a lot of water 2) take 4 Advil and 3) take 4 more before she went to bed. She did a FANTASTIC JOB!!!!!!!!
Tonight she text me to let me know her hip joints were sore. I advised her that she needed to take that Advil!!!! She proceeded to show me and explain to me that she was wearing a pair of pants that were to tight and now there was room in the waist of the pants!!!!!! WHOOO HOOO!!!!! I am so excited for her!!!!!! So proud!!!!!!! I think she is even going to sign up for a 2 mile race in June.
Exercise/Cardio/Running/Nutrition-----IT WORKS IF YOU WANT IT TO!!!!!!!!
The key is that YOU have to WANT it!!!!! STOP MAKING EXCUSES AND DO IT!!!!

New Chicken Idea!!!!!!
Mexican Chicken and Rice
4 boneless chicken breast
1 1/2 cups of rice
3 cups of warm water
1 small can of green chilies
1 can of black beans, drained and rinsed
1 package of taco seasonings
Preheat oven to 400 degrees. Combine water, chilies, rice, beans and 1/2 of taco seasoning. Pour into baking dish. Place chicken on top in mixture. Sprinkle with remaining taco seasoning. Cover tightly with foil. Place in oven for 1 hour. No peeking!!!! Remove from oven and allow to stand for 20 minutes. You have a choice. Leave the chicken whole pieces or you can remove it and shred the chicken and place in tortilla's. Awesome!!!!!!!!!
I have made this for dinner and I am ready to eat it NOW!!!!!!!!

Wow! What a difference a week makes!
I'm still working hard. Running every chance I get. I'm so motivated! I'm feeling better! It is just wonderful. It's amazing what exercise can do for you. So much to share. Working on 3 post to put up but want to make sure I have it correct. Just wait.......it's gonna be great!!!!
