FOOD FAVORITES!

These are staples in our house!  I thought I would share them after Thanksgiving to give you something maybe a little lighter for your and something the whole family would enjoy.  Most important........They are SUPER EASY!!!!


Chocolate Muffins- 
Preheat your oven to 350 degrees
1 box of chocolate cake mix
1 can of solid pumpkin

Stir the 2 together.  NO ADDING WATER, EGGS, MILK, OIL....NOTHING!!!!!!!!!  Should look like brownie batter.
Scoop into either a regular muffin pan or a mini muffin pan and bake.  Regular muffins will bake for 20 minutes.  The mini muffin pan will back for approx. 10 minutes or until a toothpick comes out clean.


Chicken and Pasta

 1 pound of boneless/skinless, cut into bite sized pieces
 2 tablespoons olive oil
 2 cloves of garlic, minced or pressed
 1 tsp basil, dried
 1/2 tsp oregano
 Salt and Pepper to taste
 1 large can of diced tomatoes or a jar of home canned tomatoes
 1 pound of any kind of pasta (prefer Whole Wheat)


Place chicken, garlic and olive oil in saute pan.  Saute chicken until it's cooked.  Add basil, oregano, salt and pepper and tomatoes.  Turn down to medium low so that water can evaporate from the tomatoes and sauce will thicken.  Cook pasta as directed.  When pasta is completed, drain and toss in pan with tomatoes and chicken.  Mix well.  Serve immediately with Parmesan cheese if you like. 


 Breakfast Burritos

Serves 4
 150 calories per serving
 5 slices of turkey bacon
 Non stick spray
 6 egg whites beaten
 1 small tomato, cored, seeded, and chopped
 1/2 cup low-fat shredded Cheddar cheese
 4 six inch low-carb tortillas
 2 cups salsa for garnish

Place the bacon between two paper towels on a paper plate.  Microwave on high 4-5 minutes, just until the bacon is crisp.  Break into pieces.  Spray a skillet with non stick cooking spray and heat on medium.  Scramble the egg whites in skillet until almost done.  Add tomato and bacon.  Cook for 30 seconds to 1 minute.  Heat the tortillas for 10 seconds in the microwave or you can warm them in a pan for a minute or two.
 Spoon the egg scramble equally into center of tortillas.  Sprinkle with lo-fat cheese on the top.  Fold burrito style.  Serve immediately with salsa to taste.

Marsha's Salad

1 bag of baby spinach leaves
1 container of feta cheese or you can use bleu cheese crumbles
1 small can of mandarin oranges, drained well
1 bag of candied walnuts or you can use pecans if you have those
1 cup of dried cranberries or cran-raisins
1 bottle of Raspberry Vinegarette Salad Dressing (Ken's Steakhouse is my favorite)
1-2 cups of a plain crouton

Mix salad together WITHOUT the dressing. Allow people to add as much as they like. It is an awesome salad. Great to take places or eat at home.

This is awesome with left over grilled chicken or shrimp!!!!!!

Broccoli and Cheese Crustless Quiche
Serves 6                   
150 calories per serving

Nonstick spray
 12 egg whites, beaten
 1 cup light sour cream
 8 ounces shredded low fat Cheddar cheese
 10 ounce package of frozen broccoli , thawed, drained, and pressed dry
 1/2 tsp black pepper
 Spray a slow cooker with nonstick spray.  In a large mixing bowl, combine, egg whites, sour cream, cheese, broccoli, and paper, then add to the slow cooker.  Cover and cook on low 4 hours.

 ENJOY!!!!!

Time Is Ticking

Time is Ticking!!!

What About You? What About Me?

Yeah, that title sounds.....arrogant, conceited, selfish and a bunch of other things you can probably think of.  That is NOT what it is meant to sound like.  I wrote on a previous post about the 10 things that I have been thankful for.  Several of the last items on that list have to do with this particular post.



I am the only one that can take care of me and I have to make the choice.  YES!!!  As a wife and Mom, I take care of my family whether they currently live at home or not.  There are things that I have to do to care for them.  For those at my home, there is laundry, dishes, cleaning, cooking, homework, errands, grocery, taxi service etc.  For those not at home, there are phone calls, text messages and emails.  With all of this that has to happen on a daily basis and they are all busy doing their own thing, I MADE THE DECISION that there are 30 minutes EVERY DAY that Mom gets to work out.  Yes, I chose to use my 30 minutes of Mom Time for a sweatfest!!!!  It is key for my sanity.  You can ask my husband anytime and he will tell you....."If she hasn't worked out in a few days, it shows".  He's not talking physical but the emotions and short tempered and the fatigue set in.  It was a really hard decision because I really thought I was being selfish.  I was being a little arrogant. I finally came to the conclusion that if I didn't do it for me, I couldn't expect anyone else to do it for me.  The sweet part- I'm using the time for me and my health but I'm also setting an example for my family as well.  Nothing makes me more happy than to see Kaleb come in and use the bands or tell me to correct my form on push-ups or Burpee's.  He knows it's Mom time and it makes me a better Mom and wife.

Yes, I am a Beachbody Coach and CEO of my NOW Is The Time company but that isn't what is important.  What is important is helping other men and women realize that it is OK to take the time for themselves and to become healthy and happy on their fitness journey!  If you realize that you are ready to take that step and start your own journey.....I would LOVE TO HELP YOU!!!!

Who's Taking The Picture?

There was a point in time where this is what kind of camera we used.  Maybe not this fancy but nevertheless it was a camera.  We didn't have cell phones with cameras.  We had to take a picture and then we had to take it to be developed.  It was a process that we really don't do much these days.  My oldest is 26.  When he was young, I was the one behind the camera.  I intentionally volunteered to always take the picture.  To be in the picture was a difficult place for me to be.  I would almost run and hide from the camera and please don't even think about taking my picture.  I was so self conscious of my appearance because of my size, it was just easier to be behind the camera.

About 4 years ago, I was working on some photos and albums and realized, I had all of the memories with my kids but ONE thing was MISSING!!!!  It was ME!!!!  My kids will now have all of these fun memories but I'm not in the picture.  It was a gut wrenching moment and one that still bothers me!!!  So what do I do about it??????

I intentionally GET IN THE PICTURE!!!  I have yet to be the one to photo bomb someone but I will actually jump in a picture these days!  Since we have the capability of having a cell phone that will take pictures, it is a lot easier.  You can turn it around and take a selfie!!!!  Now, my children have pictures with their Mom in the picture.  Are they always perfect? Is my make up perfect? Is my hair styled? Am I dressed to impress in the pictures?  No, no, no and no.  The point is that they are memories that have been created!!!  Is it always posed and perfect?  Absolutely not!  We don't even use photo-shop to make it look that way!

If you are one that hides behind the camera.......GET OUT FROM BEHIND IT!!!!  Get in the picture!!!!!  If you don't like what you see.......Make the conscious decision to do something about it!!!!  We women are really hard on ourselves about what we see in a picture!  If you think or feel you need to lose those 10-15 pounds, then do it!  If you think you need a new hair-do?  Then do it!  BUT above all....GET IN THE PICTURE!!!!!  You won't be sorry!!!  (And your kids will appreciate it!)

Smiling with Possessions

Smiling- Do you smile?  Do you constantly smile or are you someone who hardly ever smiles?  Maybe you are one that has to be told a joke or something funny has to happen.  One thing that I have learned over the past year is a smile is the key to relationships, friendships and even meeting people.  Lynn ALWAYS had a smile for everyone.  It didn't matter if she was having a  great day, a good day or a horrific day, there was always a smile to be had!  Even in the midst of everything that she was dealing with, it would come through for sure.  I have been really aware of speaking to people and smiling when I see them in the morning at work whether it's a patient, family member or co-worker.  Just the eye contact and realizing that someone cares enough to smile and say Good Morning is a game changer for a lot of people!  SMILE!!!!  It just might change your day.

Possessions are not that important.  Yes, I just said that!  In this day and time I feel that I am probably in the minority on that statement.  Don't get me wrong,   I love a new outfit.  I love a new car.  I like new things. Really I do.  Are they THAT important?????  No, not exactly!!!!  This past week I put away all of my summer clothing.  I was shocked at all of the summer dresses and outfits that I never wore this past summer.  I had enough to fill up a huge Space Bag and then part of another.  Part of me was feeling like I was hording it!  I pulled out all of my sweaters and leggings and stuff and was just amazed at what I had.  Do I need more clothing?  No not really!  I have been to India 2 times and Nepal 1 time.  I've also been to Ukraine 2 times.  When you go and you see what they have and count as their possessions it is really hard to come home and not want to simplify your life.  You take account of what you have and what you really need!  I remember the first time that I came home from India.  I felt like I needed to sell everything I owned.  It was a difficult transition back to being in the US.  We take is so for granted that we have closets full of clothes and then we complain that we don't have anything to wear.  I then have to consider the women that I met.  They own 2 sari's .  The first they will wear and the other they swap out with and that is all!!!!!!!  If they happen to have some extra money, you may find one that has a special one for those special occasions like weddings, parties, or funerals.  What if we narrowed our closet down to 3 outfits.  How would you do????

All of this being said- ,my point is this-------Your SMILE is something that can change you, your acquaintances, and your family.  I want people to remember that about me!  Secondly- You can't take your possessions with you!  Yes, they are nice but then what?  Share what you have! Share your smile! It could change YOU!!!  Be thankful for what you have! Be thankful for your smile!

Life Is Short

So yesterday I explained what I'm thankful for and some of the lessons that I have learned.  My first was that "Life Is Short".  We all know that.  We all realize that.  My question is, do we really understand that?
I used to think that I had a pretty good grasp on it.  I knew that as we all get older that people pass away and that  leaves us behind.  I lost all 4 of my grandparents in a very short span of time.  It was such a difficult time not only for my parents but as well for the grandchildren.
This past September I celebrate one of my friends that passed away last year.  At that moment, it really rocked my world so to speak.  It was so very hard!  Facing this September with some celebration as well as "Oh how I miss her!" but at the same time, thinking of rejoicing over the friendship that we shared.
Also, in September, I lost another family member.  He was my Papa Bud.  He was always like my other Papa.  Easy going and always busy with something, whether it was pottery, his cows, his garden or his caining for the chairs that we could find.  It came out of no where.  It was so quick and such a shock!  I miss him so much.  Actually caught myself looking for Christmas presents the other day and picked up a pack of diabetic socks and tears came.
Only a short time later in September I received word that one of my sweet friends that I graduated high school with had passed after a battle with cancer.  She went home on one of the most beautiful beaches in California called Bodega Bay.  Just this past week, I found out one of my favorite 3rd shift CNA's that I worked with had become ill and passed very quickly.

Bottom line.....LIFE IS SHORT!  We are given each day.  We are to make the most of it.  We are to live in the moment.  We are to be thankful that we woke up and are breathing.  We need to be spontaneous. Don't take it for granted.

Why tell all of this?  I just want you to remember when you wake up in the morning....be THANKFUL!!!!

Thankfulness and 10 Things

So we have hit the month of November.  What do you normally think of during November?
Family Gathering
Turkey with all the fixing's
Long weekend vacation
Eating to much
Football
Afternoon Coma
Parades
THANKFULNESS!!!!

Talking and thinking about Thanksgiving and November and I post a picture like this???  Why in the world?  What were you thinking?  Well, in the last couple of years I have lost several people in my life.  I've listened to news of people that have been diagnosed with catastrophic illnesses and other conditions that are incurable or there is not another option other that "just deal with it".  I have come to the realization that several things are a fact.
1.) Life is short.
2.) Possessions are not that important.
3.) SMILE.
4.) Be in the picture and NOT ALWAYS behind the camera.
5.) We are not guaranteed tomorrow.
6.) I'm the only one to take care of ME.
7.) I make the choice to take care of me.
8.) Money can't buy happiness.
9.) Enjoy time with friends and family.
10.) Fitness is VITAL to my health (emotionally and physically).
MOST IMPORTANT of all of this is being thankful that I am a sinner saved by grace and have a relationship with Jesus.  
Over the next 10 days, I will be posting about the above 10 things.  Yes, I have a lot to share about these 10 things. I hope that you will join me in my "journal" post over the next 10 days.  It's gonna be awesome!!!!!

What Am I Up To?

I realize it's been a long time but life happened.  So busy and just plain nuts is the only way I know how to describe it!  I FINALLY DID IT!!!!  I had posted on here so many times of how much I wanted to be a Beachbody Coach.  I finally took the leap.  It was very funny to see how many people thought I was already a Coach!!!  I'm loving it!!!  Paying it forward and helping other's!  I do have ambitious goals with being a Coach but that is another post for another day!
Now that I took that leap I am running Challenge Groups or Accountability Groups.  Totally blessed by doing such!  At the same time I have to keep myself going.  That is the fun part.  I get the "Coach Discount" on the programs that I buy AND hear about all of the new ones coming out.  NICE BENEFIT!!!!
Currently I am revisiting an old program.  One of the originals from Beachbody and the infamous Tony Horton!  P90X!!!  I remember the first time I put in a DVD and thought....:THERE IS NO WAY!!!  I put it in again 3 years ago and with a lot of determination I made it!!  I was so proud of myself but at the same time, I knew I needed to push a harder.  1 pound and 3 pound weights were NOT ENOUGH!!!  I'm excited to say, this time around, I'm using 10 pound weights for most exercises and really want some 12 and 15 pound weights.  NEVER thought I would say that!!
Lastly, I am diving into a new thought about how to eat.  It's always been a challenge for me and my diet.  I created a system in me that can not eat red meat.  I went vegetarian for about 2 years and have NEVER been able to add it back. I have tried and I let's just say......I won't do that again!!!  So when a friend said she was going to do a Whole 30 Challenge, my immediate response was YES!!!!!  I am always up for a good challenge.  I had the book already so that was not a problem.  I sat down and read through the first part again this weekend.  WHEW!!!  It's gonna be a challenge but I can't WAIT!!!!!  Bring It!!!!  (as Tony would say).
