30+ Days!!!!!!
Ok, I am over 30 days into my 60 day total. I KNOW that I keep saying it every time I get involved in a Challenge Group that I it is my favorite. Well, I really think this is my favorite. I have some SERIOUS arms. I have muscles in my back. I have stamina. I can kick higher. I can punch harder. I would actually LOVE to get certified with Les Mills Combat. It has been incredible. The things that Dan and Rach say during the workout just encourage you! You can't help but finish your workout and feel like you could conquer ANYTHING!!!!!!
Final numbers will be coming soon!!!!!!! I can't wait!!!!!!! The question is......WHAT COULD TOP THIS??????

Golden Beet Pasta with Basil Almond Pesto

Golden Beet Pasta with Basil-Almond Pesto
.8 ounces uncooked whole-wheat penne (tube-shaped pasta)
2 (8-ounce) golden beets with greens
2 tablespoons extra-virgin olive oil, divided
3/4 cup water, divided
1/3 cup organic vegetable broth
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cups loosely packed fresh basil leaves
1/4 cup dry-roasted unsalted almonds
3 garlic cloves, chopped
2 ounces fresh Parmigiano-Reggiano cheese, grated (about 1/2 cup)
1 tablespoon fresh lemon juice
Preparation
1. Cook pasta according to the package directions, omitting salt and fat. Drain.
2. Remove greens and stems from beets; rinse and drain. Coarsely chop greens and stems to measure 4 cups. Peel beets, cut in half vertically, and cut into 1/8-inch slices.
3. Heat a large skillet over medium-high heat. Add 1 tablespoon oil to pan; swirl to coat. Add beets; sauté 3 minutes. Add beet greens and stems, 1/2 cup water, broth, salt, and pepper; cover. Reduce heat to medium; simmer 8 minutes or until beets are tender.
4. Combine remaining 1 tablespoon oil, basil, almonds, and garlic in a food processor; process until smooth. Add cheese and remaining 1/4 cup water; process until blended. Add pasta, pesto, and lemon juice to beet mixture; toss to combine.
ENJOY!!!!!!

My Motto!
When I started P90X for the 3rd time, I picked up on Tony saying this. The light finally clicked! "CAN'T" should not be in your vocabulary!!!!!!! I have even taken it so far as not letting Kaleb say that he "CAN'T" do something!
When I started P90X I couldn't......
Do push ups (any kind)
Do a full DVD
Do plyometrics
Do any more weight than 3 pounds and I was DYING at that
Do "Pull-Ups" with the bands
NOW-------
I CAN!!!!!!
Do push ups- any kind
Do a full DVD
Do Plyometrices
Do more than 3 pounds and now purchasing 10 pound weights
Do "Pull-Ups" with a HEAVY BAND and even do some on the machine at the gym!!!!!
DON"T SAY CAN'T!!!!!!!!
