Sweet Potato Skins


Sweet Potato Skins with Chicken and Spinach

These healthier baked Sweet Potato Skins are topped with spinach, perfectly spiced chicken, and cilantro, with a dollop of Greek yogurt.

Ingredients

  • 4 baked medium sweet potatoes cut in half
  • 1 tsp olive oil
  • ½ tsp sea salt (or Himalayan salt)
  • 4 oz shredded cooked chicken breast
  • 1 tsp all-natural taco seasoning no salt added
  • 1 cup steamed spinach
  • ½ cup reduced-fat (2%) plain Greek yogurt
  • ¼ cup chopped fresh cilantro

Instructions

  1. Heat oven to 400° F.
  2. Scoop flesh out of the sweet potatoes and reserve for another use.
  3. Place skins on baking sheet. Brush with oil and sprinkle with salt. Bake for 10 minutes, or until crisp.
  4. While skins are baking, combine chicken and taco seasoning in a small bowl; mix well. Set aside.
  5. Replace sweet potato flesh and top each sweet potato half evenly with spinach, chicken mixture, yogurt, and cilantro.

Old Bay Chicken Salad




Old Bay Chicken Salad

Super Simple!!!!!!

8-10 baked chicken tenders or 2 large baked chicken breast
1/2-1 cup mayo
1 tablespoon mustard
3 hard boiled eggs
Low Sodium Old Bay Seasoning (as much as you like)

Place chicken and eggs in food processor and pulse to desired texture
Place egg and chicken mixture in a large bowl.
Add mayo, mustard and small amount of Old Bay Seasoning and mix completely.  Taste and adjust Old Bay to your taste.
****Do not add salt or pepper until after combined.  Old Bay is naturally salty and a slight bit spicy. Add salt and pepper accordingly

Allow to sit over night if possible.

Healthy Chicken Parmesan

Serves: 4 servings, 1 chicken breast each
Ingredients
  • Nonstick cooking spray
  • 1 cup whole grain Panko bread crumbs
  • 4 Tbsp. grated Parmesan cheese, divided use
  • 1 dash sea salt (or Himalayan salt)
  • ¼ tsp. ground black pepper
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • 2 large eggs, lightly beaten
  • 4 (4-oz.) each raw chicken breasts, boneless, skinless
  • 1 cup all-natural marinara sauce, no sugar added
  • ¾ cup shredded part-skim mozzarella cheese
  • 1 Tbsp. finely chopped flat leaf (Italian) parsley
Instructions
  1. Preheat oven to 450° F.
  2. Lightly coat medium baking sheet with spray. Set aside.
  3. Combine bread crumbs, 2 Tbsp. Parmesan cheese, salt, pepper, garlic powder, and onion powder in a small bowl; mix well. Transfer to a plate. Set aside.
  4. Place eggs in a shallow dish. Dip each chicken breast in eggs, completely coating, then bread crumbs; coating each evenly on all sides. Place chicken on prepared baking sheet.
  5. Bake for 22 to 26 minutes, turning after 15 minutes, or until chicken is no longer pink in the middle and juices run clear.
  6. Preheat broiler on high.
  7. Top each chicken breast evenly with marinara sauce, mozzarella cheese, and remaining 2 Tbsp. Parmesan cheese. Return to oven for 2 to 3 minutes, or until cheese is melted.
  8. Sprinkle with parsley before serving.
