DAY 17!!!!
Oh My Heavens!!!!!! I can not believe I am already at Day 17. It is flying by!!!!! This program is INCREDIBLE!!!!! Talk about feeling the WARRIOR!!!! I have punched and kicked, jabbed and uppercut more in the last 2 1/2 weeks than I every have. I LOVE P90X and P90X3 but this one has taken me to a totally different level.
Confidence is just amazing. My arms and shoulders.....well....no wings or flab this summer! I am ready for the summer!!!!!! This program is only 60 days and that means I am close to 1/3 of the way there.......I can't think of what is next because I am loving this one soooo much right now! We may do 2 ROUNDS!!!! DING DING!!!!
There is something about flinging sweat around in the front room of your home because you are so "into" your workout! Never experienced anything like this! What about you? Need a challenge? Want to give it a try?? I can hook you up with a Coach and get you ready for the summer!!!!

Flourless Brownie Cupcakes!
Flourless Brownie Cupcakes
These dark chocolate cupcakes delicious, and surprisingly healthy. If making these for Passover, make sure your baking soda is ok for Passover.Total Time: 22 min.
Prep Time: 20 min.
Cooking Time: 12 min.
Yield:12 servings, 1 cupcake each
Ingredients:
1 (15 oz.) can chickpeas (garbanzo beans), drained, rinsed
3 large eggs
½ cup pure maple syrup
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
3 Tbsp. coconut oil, melted
1 tsp. pure vanilla extract
1/3 cup dark chocolate chips
Preparation:
1. Preheat oven to 350° F.
2. Prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
3. Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and extract in blender or food processor; cover. Blend until smooth.
4. Divide batter among 12 prepared muffin cups.
5. Top each cupcake with about four chocolate chips; push into batter.
6. Bake for 10 to 12 minutes, or until toothpick inserted in center comes out clean.
7. Cool completely and enjoy!

My Biggest Weakness.....MEXICAN FOOD!!!!
Well, we have Life Group tonight and all I could think of was "MEXICAN FOOD"!!!! You know when you just want it and that's all you can think about. In the back of my mind I am trying to figure out how to do this without KILLING what all I am working toward. I look in the pantry.....No refried beans. No Spanish rice mix. So I stood there for a minute and chose to take things into my own hands.
Here is what I did.......
No refried beans......No problem.....
(** I buy the large container of Taco Seasoning that you can get at Sam's/Costco)
1 can pinto beans- DO NOT DRAIN
1 can light red kidney beans- drained
1 tsp. onion powder
1 Tbs. taco seasoning
1/2 tsp. cumin
Mash up the pinto beans with the liquid. Not pureed but just mashed with a potato masher or fork. Add in the kidney beans and the other seasonings. Stir to mix well. I don't add any salt because the beans are already salty. Place in an oven safe dish and bake for 30 minutes on 375 degrees.
No Spanish Rice mix......NO PROBLEM
1 can chicken broth- low sodium
1 can Rotel tomatoes
1 Tbsp. Taco Seasoning
1 cup of long grain rice
Bring broth, tomatoes and seasoning to a boil. Stir in the rice, cover and reduce to simmer for 17 minutes. Better than anything in a pouch!!!!!
Taco Meat
1 package of Ground Turkey
1/4 cup Taco Seasoning (1 packet)
1/2 cup of salsa
3/4 cup of water
1 small can of green chili's
Brown the turkey. Add in the seasoning, salsa, water and green chili's. Cook over medium high heat until thick.
It was SOOO EASY!!!!! Key is that I made it and I know what is in all of it!!!!!!!! The other way to make this a little better for your clean eating......We serve the meat and beans over lettuce like a taco salad. Add some salsa, fat free sour cream and a small amount of cheese. Another great thing to add is roasted vegetables. I always have carrots, onions and peppers that have been roasted in the fridge. Throw them in and its like having a fajita salad!!!!! YOU CAN"T GO WRONG!!!!!!! Skip the tortilla!!!!!

Blueberry Maple Muffins
Blueberry Maple Muffins
These blueberry muffins taste—and smell— incredible. One whiff of them fresh from the oven and you won't be able to wait until they hit your plate!Total Time: 24 min.
Prep Time: 10 min.
Cooking Time: 14 min.
Yield: 15 servings, 1 muffin each
Ingredients:
Nonstick cooking spray (optional)
1 cup whole wheat flour
¾ cup + 2 Tbsp. all-purpose flour
¼ cup wheat germ
1½ tsp. baking powder
½ tsp. baking soda
¼ tsp. fine sea salt
1 tsp. ground cinnamon
2 large eggs
½ cup pure maple syrup
1 cup low-fat buttermilk
¼ cup coconut oil, melted
1 tsp. vanilla extract
1½ cups fresh blueberries
Preparation:
1. Preheat oven to 375° F.
2. Prepare 15 muffin cups by lining with muffin papers or coating with spray.
3. Combine flours, wheat germ, baking powder, baking soda, salt, and cinnamon in a medium bowl; mix well. Set aside.
4. Combine eggs and maple syrup in a medium bowl; whisk to blend.
5. Add buttermilk, oil, and extract; whisk to blend.
6. Add flour mixture to egg mixture; mix until just blended.
7. Gently fold in blueberries.
8. Divide batter among 15 prepared muffin cups.
9. Bake 13 to 14 minutes, or until golden brown and tester inserted into the center comes out clean.
10. Transfer muffins to rack; cool.

Pictures and Stuff!
Well, as I shared, I have completed the P90X-3 Challenge. I am amazed that I actually did it. It just absolutely blows my mind! I know that I am stronger and able to do more now than I ever thought possible. I would be the first to tell you that there was not a huge weight loss but the amount of inches lost and the strength gained are ALL WORTH the hard work that P90X-3 requires! So I shared my details, and some have ask for a picture. I had my hubby snap it before we headed to church this morning. The dress I have on was purchased last year. It was a little snug in places but I still wore it. I slid into it this morning and could NOT believe it!!!!! It was loose!!!! PERFECTION! I was so excited!
