FOODIE FRIDAY!!!!!
Time: 43 min.

Yield: 8 servings, about 1½ cups each

Ingredients:
1 Tbsp. olive oil
1 medium onion, chopped
2 medium carrots, sliced
2 cloves garlic, chopped
1 cup white corn kernels
1 (14.5 oz) can diced tomatoes, no salt added
3 cups low-sodium organic vegetable broth
1 tsp. dried ground thyme
2 bay leaves
1 cup broccoli florets (or cauliflower florets)
2 medium red or white potatoes, cut into ¾-inch cubes
1 medium yellow squash, cut into ¾-inch cubes
1 cup medium zucchini, cut into ¾-inch cubes
1 Tbsp. olive oil

Chicken Meatballs in Marinara
Chicken Meatballs in Marinara
(Great for Meal Prep)
Chicken Meatballs-
1 pound package of lean ground chicken
Salt and Pepper as you like
1 Tbs of Italian Seasoning (I use McCormick's)
1 Tbs of Tomato Paste
1 egg
(NO BREAD CRUMBS)
Preheat oven to 400 degrees.
Mix all ingredients together until well combined. Spray your hands with a small amount of non stick spray and roll chicken mixture into small meatballs. I use a small Pampered Chef cookie scoop to make sure that all of my meatballs are the same size. Place in a shallow baking dish and bake uncovered for approx. 20 minutes.
Marinara Sauce-
1 large can of crushed tomatoes
1 small can of tomato sauce
1 small can of tomato paste
1 Tbs. of Italian seasoning
1 garlic clove diced fine
1 large bell pepper (orange, red or yellow) finely diced
1/4 of small onion, finely diced
Salt and pepper to taste
Stir all ingredients together and allow to simmer for at least 20-30 minutes.
When meatballs are finished cooking and the sauce has simmered, pour the sauce over the meatballs and return to oven for appox. 20 minutes. The sauce will thicken and the meatballs will absorb the flavors from the sauce.
Remove from the oven and allow to cool. Cover and place in refrigerator.
OR
Remove from the oven and ENJOY!!!!!!!
Extra addition-
MUSHROOMS!!!.1 large contaniner of sliced mushrooms (any that you like)
1 Tbs of Olive oil
Salt and Pepper to taste
Saute mushrooms until cooked through and slightly browned. Spoon over meatballs and marinara.
You will not miss the pasta!!!!!!
BONUS!!!!!
If you have left over Marinara and mushrooms- pour over turkey burgers and have for a dinner otlar lunch later in the week!!!!!!

BIG ANNOUNCEMENT!!!!!
YouTube Anyone?
I am one that loves to go to YouTube and watch silly videos from AFV (America's Funniest Video) with my Little Man and we can laugh for days. I love YouTube to see medical procedures, especially ones that I schedule as part of my job at work. Of course being a Beachbody Coach, I love to watch some of the Coaching videos and watch what others are talking about and what they are posting about and just getting excited about what I want to do with my business.
I have posted numerous videos on my Transformation Coach Pam Facebook page. (Click Here). My goal has always been to figure out how to get them on to YouTube and be able to have my own "YouTube Channel". I knew that maybe if I can figure out how to do that it would just be wonderful. Of course, where do you go when you need to figure out how to do something? YouTube!!!!!! I went there. I found a great guy that posted the easiest way to take a video from Facebook and create it in YouTube.
I'm excited to announce that I HAVE A YouTube Channel!!!!
Is that like AWESOME!!!?
I got off my behind and made up my mind to do something.
I followed that simple instructions and just DID IT!
I had even seriously considered letting someone else do it for me but I was DETERMINED to do this on my own!
All of that being said, I will be able to post on my YouTube Channel on a regular basis as well as my Facebook Page. I will even be sharing some of the video's here as well!

Super Bowl Weekend Foodie Friday!!!!!!!
I know that a lot of us are either going to a Super Bowl Party or we are having one at our homes. This was a perfect time for me to share some of our favorites that we enjoy!!!!! Super easy!!! That's what its all about!!!!! TIME SAVING!!!!!!!

Tasty chili-pepper dishes ready in 20 minutes or
less
5 minutes
Fresh Salsa
In a food
processor, pulse together 1 to 2 remove seeds peppers, 1 garlic clove, 1/2 small
red onion, handful of fresh cilantro, and 3 medium tomatoes. Add salt and pepper to taste.
10 minutes
Fish Tacos
Sauté
halibut (broken into pieces), poblano pepper slivers, diced onion, and fajita
seasonings in olive oil. Serve in
whole-grain tortillas with shredded cabbage and chipotle dressing.
15 Minutes
Tex-Mex Salad
Sauté 3/4
pound ground beef, diced jalapenos, and chopped red onion in 1 tablespoon olive
oil for 5 minutes. Toss with lettuce,
diced tomatoes, black beans, corn, and taco salad dressing

World- August 2012
Spicy Roasted Chickpeas
1 TBSP olive oil,
1.5 tsp chili powder,
1.5 tsp cumin,
1/4 tsp salt,
1/8 tsp tsp cayenne,
2 15.5 oz cans
chickpeas rinsed drained and patted dry.
Preheat oven to 400.
Stir all together and place on tray. Bake for about 30-45 min until crispy!
A healthy snack
option!
Black Bean and Corn Salad
1 can black beans rinsed well
1 can corn rinsed and drained
1/2 red onion
1 whole red bell pepper
1/2 cup of mayo (reduced fat/homemade/olive oil based)
1/2 bag of Chili
Frito's
Mix the first 5 ingredients and chill. When you are ready to serve, take approx. 1/2
bag of Frito's and crush them into bite sized pieces. mix in with the salad. Serve immediately. IT IS INCREDIBLE!!!! It can be addictive so be warned!!!
Additions- Stir in
grilled chicken or sliced grilled steak and serve over shredded lettuce.
You can also add more black beans and more corn if you like
as well or if you are taking to a party.
You can also use less mayo or even Fat Free if you prefer.
