Fruit Cobbler

Fruit Cobbler
 
This is one of my favorites.  You can use any kind of fruit.  Typically I will use peaches, nectarines, blackberries, blueberries, strawberries.  You can use frozen or drained canned fruit.  Of course, served warm with vanilla ice cream is incredible!!!!!  This is one of my Granny's recipes.  One of the first cobbler I ever learned and the easiest to remember.

Fruit Cobbler

1-1 1/2 cups of fruit of your choice
1 cup sugar
1 cup flour
1 cup milk

Preheat oven to 350 degrees.  Combine all ingredients well.  Spray 9 inch round or square baking dish with cooking spray.  Pour in mixture.  Bake for approx. 35-45 minutes.  Time will differ depending on fruit.  Just watch until golden brown and set.  Serve warm or room temperature.

Blackbean and Corn Salad

This is probably one of my favorites.  My friend Melissa introduced it to me and we just love it.  My husband even likes it!!!!!  The fun part is that it is so very simple!!!!!  So, let's get started!!

Black Bean and Corn Salad

1 can black beans rinsed well
1 can corn rinsed and drained
1/2 red onion
1 whole red bell pepper
1/2 cup of mayo
1/2 bag  of Chili Frito's

Mix the first 5 ingredients and chill.  When you are ready to serve, take approx. 1/2 bag of Frito's and crush them into bite sized pieces.  mix in with the salad.  Serve immediately.  IT IS INCREDIBLE!!!!  It can be addictive so be warned!!! 

Additions-  Stir in grilled chicken or sliced grilled steak and serve over shredded lettuce. 
You can also add more black beans and more corn if you like as well or if you are taking to a party.  You can also use less mayo or even Fat Free if you prefer.

Transformation Continues.....

We are on the way to Mississippi.  VERY excited!  In the midst of all of it I am continuing to work on my "plan".  It's very different and I have read so many books of all kinds with diets and exercises.  I don't want mine to be anything close to what I have seen and read.  I want it totally different and something that anyone can do. 

I have shared it with a few friends and they loved it and said it was great.  Tara was awesome and went for it and happy to say, she is still on it and working.  I'm so proud of her.

Anytime Black Forrest Blizzard

Anytime Black Forrest Blizzard
1 heaping cup frozen, dark sweet cherries
1 frozen banana, cut into chunks
1 cup chocolate soymilk
1/4 cup Greek yogurt
2 teaspoons honey or agave syrup
1/4 teaspoon almond extract
4 Famous Chocolate Wafers, crumbled

Place all the ingredients-except the Famous Chocolate Wafers- in a blender; process until creamy smooth.  Divide between two glasses.  Top each with a portion of crumbled Famous Chocolate Wafers. Serves 2

Transformation Tara Update!

                                     I got a great update from Tara.  I'm so excited for her!!!! 


Hello everyone.  I have not fallen of the “wagon”.  I have just been busy...busy with family, work, friends and working out.  I am feeling great.  I have more energy and the running is getting easier.  I ran with Pam on Saturday and did well.  I am not fast but not bad.  I am eating healthier, still struggling with my water but all in all encouraged.  The scale is not moving fast but I can tell in my body.  I have a week till the wedding I told you about and I probably will not make the 15 pounds but that’s okay.  Every pound down is one less to lose.  I have increased my miles a lot in the last two weeks and I think I am going to start riding my bike twice a week just to give my hips a break instead of running 5 days.  I think I am only supposed to be running 3 days anyway but I can be a little over the tops sometimes.  Ask Pam about running Saturday morning and I thought we had less than a mile left…well I took off determined to make it in a certain time and well Pam was off a little on how far we had left.  I think she called me a woman on a mission. 
 So, there you have it a woman on a mission.  If you are debating starting a program and thinking I am too fat, too out of shape or too old.  Every time you exercise you are lapping the person sitting on the couch.  Happy exercising.

Still Running and Going!!!!!

So I am running more days per week and starting to add on mileage getting ready for a race or 2.  I am just loving it.  Whether I am running alone or with a couple of friends, it is just time for me to go and keep going.  Sometimes when I am running, I feel like the Energizer Bunny and then sometimes I feel like a tortoise.  I actually saw a sweet little turtle crossing the road the other day.

Anyway, I have spoken with Tara.  She is working hard. She is feeling GREAT. She looks fabulous!!!!!!!!!!!!  She is going to write a post and I can't wait for her to do so.  Amber, Tara and myself went running on Saturday and it was wonderful.  We did 4+ miles on our run.  It was GREAT!!!!  I'm not sure that Amber and Tara would agree with me but they stuck with me and we got it done.  So excited and proud!!!!!!

I have joined the Greensboro Running Club and part of that is the Women's Running School.  It is so exciting.  I actually didn't get to go on Thursday but I did get a great e-mail from my coach.  It even included my "homework" for the week.  The cool part is that the entire program is written on a run/walk theory.  I was amazed when I heard that.   So my part this week is run 10 minutes, walk 3 and then repeat 2 more times.  I think I can handle that!!!!!!

How are you doing?  I have another friend who wants a copy of "Transformation".  I am really excited for her.  Not going to share her name until she gives me the OK but she has asked me over and over for it.  She is motivated and ready!!! Whoot!!!!
