Tasty Tuesday


Bagel chips

 Topped with za'atar, a Middle Eastern mixture of sumac, sesame seeds, and herbs, these thick, crispy chips have so much flavor there's no need for dip. (Look for za'atar in specialty stores or use oregano, thyme, or Italian seasoning instead.)
Serves: 6

 Ingredients:

 2 3.5-ounce gluten-free bagels, halved and cut into 1/8-inch thick slices

 2 1/2 tablespoons extra-virgin olive oil

 2 tablespoons za’atar

 Directions:

 Preheat oven to 325 degrees and line a large baking sheet with parchment paper. Place bagel chips in a large bowl, drizzle olive oil, and season with za’atar, tossing gently to coat. Arrange slices in a single layer on baking sheet and bake for about 20 minutes until golden brown. Store in an airtight container for up to 5 days.

  Nutrition score per serving: 160 calories, 9g fat (1g saturated fat), 17g carbs, 3g protein, 1g fiber, 1g sugars

Tasty Tuesday


 Salt n vinegar Brussels sprouts
 Like kale, Brussels sprouts packs in vitamin A, C, and K, the last of which is necessary for blood clotting. Using just the leaves of the veggie makes for thin and crunchy chips full of that salty, tangy flavor you love.

 Serves: 2
Ingredients:

 1 pound fresh Brussels sprouts

 2 tablespoons balsamic vinegar

 2 tablespoons Mrs. Dash seasoning (or 1 teaspoon pink salt)
Directions:

 1. Preheat oven to 350 degrees and line one or two large baking trays with parchment paper. Cut stem from each sprout and peel off leaves, saving center for another recipe, if desired. You should have 3 cups leaves.

 2. In medium bowl, lightly drizzle leaves with balsamic vinegar and seasoning. Bake for 8 to 10 minutes until crispy and brown around the edges. Add additional seasonings to taste before serving, if desired. Store in an airtight container for 1 to 2 days.

 Nutrition score per serving: 130 calories, 1g fat (1g saturated fat), 26g carbs, 11g protein, 4g fiber, 3g sugars

Transformation!!!!

This is Steffanie and what she shared with "The Group" on Facebook!!!!  I can't tell you how proud I am of her!!!!  She is an incredible young woman!!!!!!  This is what happens when you find a group for support and encouragement!!!!!
I feel like I need to share this. Almost 1.5 years ago, the VA considered me 40% disabled, and distributed me a cane to use. At 22, this killed me mentally. I went on for a while, thinking I could never get back in the saddle, and back into my military service. Honestly, I think I became depressed after a while. Two months into that depression, I decided that I wasn't going to sit there and be like that. Over the past year I have been doing a bit of some Yoga and swimming to help get back into shape. Over time, my back got better to the point that I don't need the cane, the PTSD I suffered from, I worked through it *thought I still have it, it doesn't bother me*. I looked into getting back into the Air Force, and I have to wave the disability to do so. I have no problem with this, though I'm sure others will call me crazy, or a liar; I AM getting back in the saddle. A YEAR AGO I WAS TOLD I WAS CANE-BOUND. Today, I ran 1.5 miles in 14 minutes, I did 28 push-ups, and 33 sit ups. My waist is a 33. I am living proof that restrictions can be a hindrance of the mind. Pushing yourself in ways you didn't think you could can lead you to better outcomes than you thought possible. I submitted the paperwork to the recruiting office, and I plan on a commission program to become a 2nd Lt, and an RN. ♥

Transformation CAN Happen!!!!

I have a Group on Facebook that I just think are wonderful.  We get on there and we talk and we are honest and we encourage and support each other.  It could be a small step or it could be huge leap but the point is that we are there for each other. 

The other day, one of the ladies posted something that she has been working toward and I was so excited!!!!!!!!  I'm going to check with her and see if I can share her story.  It was one of those moments for me to realize that I needed a clean slate and lets get this thing done. 

I restarted My Fitness Pal and reset some other things and we are off and running now.  She talked about how we were so encouraging to her but what she shared was exactly what I needed to hear!!!!

Stay tuned and I'll share what I can.  IT'S JUST AWESOME!!!!!!

Tasty Tuesday


Breakfast

 Sausage and Oat "Grits"

 1 1/2 cups cooked steel cut oatmeal
1 ounce crumbled soft goat cheese
3 chopped sun-dried tomatoes
1 ounce thinly sliced pre-cooked chicken sausage

 Top with oats with the additional ingredients and enjoy!!!!

OUCH!!!!

A great place here in our little town called B-Train had a Kids Day yesterday.  We decided to go and see what it was all about.  We had a Boot Camp class together.  Kaleb got to write his name on the sidewalk, and jumping on trampolines.  They had face-painting and athletes to sign pictures and door prizes.  It was SOOOO MUCH FUN!!!!!

Chang in routine, means that you worked a different group of muscles.  Well, let's just say......The Boot Camp Class KILLED MY QUADS!!!!!  I think if I have to get up out of a chair or go down another set of stairs, I may have to cry.........

Change up that routine.  Don't let those muscles go to long before you work them again.  Guess you could call it.....muscle confusion........time to change up the routine.  Maybe even hit the road for some running if the weather cooperates!!!!!!!!

I have been following some new blogs and great people of Facebook.  I hope to have their links on the side by the end of the week.

WELCOME!!!!!

It's about time.  No, I really mean it is about time.  I have thought long and hard.  I have looked. I have searched and I have prayed.  There have been ups and downs and new ideas and new activities.  When this blog first started it was going to be all about food and ideas.  The start was more about sharing different ways of staying on top of a schedule with family and working full time and finding ways to stay sane.
 
Times have changed and so have I.  I'm so excited!!!!!!  Pam's Pantry is now.........
