Sweet Potato Hash with Eggs

This sheet pan sweet potato hash with eggs is an easy, high-protein breakfast!

Ingredients

  • Parchment paper
  • 2 medium sweet potatoes cut into 1-inch cubes
  • 1 medium onion chopped
  • 2 cloves garlic finely chopped
  • 1 medium red bell pepper chopped
  • 1 cup black beans drained, rinsed
  • 1 cup corn kernels
  • 1 Tbsp. + 1 tsp. olive oil
  • 1 1/2 tsp. chili powder
  • 1/4 tsp. ground cumin
  • 1/4 tsp. ground smoked paprika
  • 1/2 tsp. sea salt or Himalayan salt divided use
  • 1/2 tsp. ground black pepper divided use
  • 8 large eggs
  • 2 Tbsp. finely chopped fresh cilantro

Instructions

  1. Preheat oven to 400ΒΊ F.
  2. Line large sheet pan with parchment paper. Set aside.
  3. Combine sweet potatoes, onion, garlic, bell pepper, beans, corn, oil, chili powder, cumin, paprika, ¼ tsp. salt, and ¼ tsp. pepper in a large bowl; toss gently to blend.
  4. Place sweet potato mixture on pan. Bake for 18 to 20 minutes, stirring after 10 minutes. 
  5. Create eight wells in sweet potato mixture. Gently crack an egg into each well. Season eggs with remaining ¼ tsp. salt and remaining ¼ tsp. pepper. Bake for 8 to 10 minutes, or until eggs are set.
  6. Garnish with cilantro; serve immediately.

What’s the point??πŸ€”πŸ€”

Well it’s accountability!  It’s accountability for me to share my journey!   I was talking with someone the other day and she asked me “Why bother?”  “Why do all of that?” “Who are you trying to impress?”
I thought I would answer those questions!!!!
1-Why bother?  Because it’s a part of who I am.  It’s the part of that has passion about what I do and to be the best version of me possible!  Taking care of me means I am a better wife, mother, sister, daughter, employee, friend!  
2- Why do all of that?  I have genetics!  I have tendencies!  I have cardiovascular disease, diabetes, heart disease, breast cancer, obesity in my family. I have an amazing husband and I also have 3 children and 2 grandchildren that need their Mama and their Mimi!! 
3- Who am I trying to impress?   NO ONE!!!!!  I’m not doing this to be a certain number on the scale or wear a certain size or to compete with other women.   I want to impress my husband but his love is unconditional!!!  I want to feel good about me and know that what I’m doing is making a difference.


Bottom Line- if someone- just one- person makes the choice to get off the couch today or drink water instead of a soda or eat grilled chicken instead of fried- then I have done my job!!!!!!!   I’ll post my pictures and share my journey in hopes of taking others on their journey with me!!!!!!

Peanut Butter Chocolate Chip Cookies


Peanut Butter Chocolate Chip Cookies

These surprisingly healthy Peanut Butter Chocolate Chip Cookies are made with all natural peanut butter and decadent dark chocolate morsels.

Ingredients

  • Nonstick cooking spray
  • 2 cups cooked quinoa
  • ½ cup all-natural peanut butter
  • 5 Tbsp. pure maple syrup
  • 1 dash sea salt (or Himalayan Salt)
  • 1 tsp. pure vanilla extract
  • 1 large egg
  • ⅔ cup dark chocolate chips

Instructions

  1. Preheat oven to 350° F.
  2. Lightly coat two large baking sheets with spray. Set aside.
  3. Combine quinoa, peanut butter, maple syrup, salt, extract, and egg in a large bowl; mix well.
  4. Fold in chocolate chips; gently mix until blended.
  5. Drop by rounded Tbsp. onto prepared baking sheets.
  6. Bake for 18 to 22 minutes, or until set.
  7. Allow to cool for 5 minutes on baking sheets; remove from sheets and cool completely on a wire rack (or on parchment paper).

Wishes Turned To Goals!


Last week I shared about not having any GOALS written on a calendar.  I had a TON of WISHES!  I had sticky notes and notes written on papers and and a notebook full of just STUFF that I HOPED I would accomplish.  If you know me, I am NOT one that will drop $50-$75 on a planner.  I am super picky and I am the worst.  I get one, use it for a week, maybe and then I give up on it.  I shoot for perfection and not what the intent is for the planner.  This time I did some looking.  I can not begin to tell you how many I looked at.  It was at least 50 I am sure.  I looked from $5 to $30 and I was struggling with $30.  OF course, Amazon came to the rescue!!!!  I found something that I could work with and it had what I was in need of.  I was so DONE with the sticky notes, losing the sticky notes, the frustration of missing an event and wondering why I wasn’t reaching the WISHES that were in my head and in my heart.
Here is a peek inside the planner that I got.
This is EXACTLY what I needed.  I got it in the mail last Saturday and Sunday afternoon, I sat down with all of my sticky notes, my miscellaneous ideas and papers with dates for bowling and school and wrote them all in the planner.  I was then able to see the week planned and writing down all of the events that were on tap for the week.  Bo’s cardiac rehab and his bowling, Kaleb’s dental appt., Kaleb’s LEGO League at school, workouts, water intake, meetings etc.  It was a totally incredible feeling knowing that I was READY for the week.  The week was insanely busy crazy but even with that I was able to be prepared and ready for my week.  It was AMAZING!!!!!  
I think the most exciting part will be this weekend.  There is a page in the planner called the Monthly Vision page.  I have the awesome opportunity to sit down and REALLY consider what I want my goals to be for the month.  What do I want to accomplish with my family?  What are my goals for my workouts? What are my goals for my business?  Things that are normally just spoken about or written  on a miscellaneous sticky note somewhere.  NOW they are no longer WISHES!  
They are GOALS!!!!!!!!!

Wishes Vs Goals

                                                    A Goal Without A Plan Is Just A Wish!!!

I have thought long an hard about this quote over the past week.  I have been trying really hard to make some decisions and some plans but I kept running into a problem.  NOTHING was on paper.  I was WISHING for a lot of things and nothing seemed to be happening and I was getting more frustrated.  Then the other morning, this quote popped up in the app that I use for my morning motivation post and hit me right between the eyes and dead center in the heart!  I have a hard time sharing and motivating people with quotes if I don’t “practice what I preach”.

Ok so I will share with you what this said to me.  This does not JUST APPLY TO FITNESS!!!!  This can apply to ANYTHING!!!!!  So what better way to share what was in my head than to actually show you.

In my head it was a mess.  These are the things that were jumbled up in my brain!!!  Want to talk about OVERLOAD!!!!!  

-Kaleb adjusting to new schedule with school
-Kaleb trying to figure out where he fits in and what can we do to encourage him
-Kaleb adjusting to a totally different way of homework and reading assignments
-Bo and I placing new “Middle School Rules” in place and STICKING TO THEM!
-I need to blog!  I need to write because I LOVE IT and I WANT to share.
-Upcoming Races and where they are, when, and am I already registered or do I need to register.
-Upcoming programs that are coming out with my company
-Upcoming challenge group and some new ideas for more accountability and more fun and some really cool ideas
-Wanting more results from SHRED WEEK of LIIFT4
-Streamlining my eating and portion control.
-What will be my next program to jump on
-Pushing beyond my comfort zone and sharing my passion for what I do.

So, when you have this much “STUFF” running through your head, where in the world do you start and how in the world do you organize yourself to turn all THAT into GOALS and not just WISHES!?  It’s mentally overwhelming and can just blow your brain away with frustration and confusion and the infamous “I CAN’T DO IT ALL!!!” Then.............we QUIT!

All of this to say........I’M BACK!!!!!!  I’m READY!  LET’S DO THIS!!!!!!!  So over the next couple of post I am going to share with you what I am working on and you can see all of the ideas and plans actually fall into place and become REALITY and GOALS and no longer STRESS and FRUSTRATION!!!  My prayer is that this will help you and keep me ACCOUNTABLE!!!!!!
