Meal Prep Week- Day 3 of 3

TOOLS !
There are TOOLS for Meal Prep and that is what can make or brake you.  You obviously need your cookware and any kinds of tools that will make your Meal Planning that much easier.  As one who has sold Pampered Chef in the past, I am a die-hard one for PC products.  They last FOREVER, it seems!  
The other key TOOLS for Meal Prep is choosing your storage containers.  You can use plastic, Tupperware, glass or Pyrex.  Of course making sure that what you choose is microwave safe.  The other thing is if it is dishwasher safe as well.  That will help with quick cleanup after meals.  There is nothing harder than trying to prepare without the right tools that make your life easier.  
Remembering that you are preparing the “Main Dish” of your dinners and of course making extra for lunches as well.  
I have received several more questions that I would love to answer so STAY TUNED!!!!!!!

MEAL PREP WEEK!!!!!!


I get a ton of questions about Meal Prep.
Anything from........
-I don’t have time.
-I don’t know how to start.
-It’s to complicated.
-It cost to much.
-I don’t think my family will eat it.
-I will waste food.
Ok, so after these types of questions, I can’t help but answer.  So, this week we will cover your questions that I am asked the most often.  It will change everything and especially if you work full time.  Even if you are home full time with little ones, this will make your evenings go so much smoother!!!!!

Meal Prep Afternoon

Meal Prep Sunday

It has become a MUST in our house.  It MUST happen if we plan on making it through the week without making compromises in the drive thru or with delivery.
Therefore we MEAL PREP!!!!!
So what is on the menu???  I am venturing out and trying some new things but hear me out.....THEY ARE EASY!!!  I do not add a something complicated to Meal Prep day.  It must have been tried before or so simple that you CAN NOT mess it up!!!!!

Here is the list for today.......
Egg Cups (made yesterday)
Boiled Eggs for snacks
Deviled Eggs for the hubby. (Eggs are already cooked)
2 prepackaged salads from Sams ( I LOVE THEM)
Roasted root veggies (sweet potatoes and parsnips and carrots)
Quinoa
Pasta
Turkey Burgers on the grill
Chinese Shrimp/Roasted Tofu/Chinese Veggie Stirfry
Chicken Sausage (basil, garlic and spices) Grilled
Rice
Roasted pork tenderloin
Basic Grilled Chicken
Black Bean Soup-Made this yesterday-5 MINUTES!!!!


DO NOT let it overwhelm you!!!!  It sounds like a lot but if Hubby does the grilling, the rest is REALLY QUICK!!!!  YOU CAN DO THIS!!!!!!!!

Egg Cups


Egg Cups

This was so easy and I can not believe I have never made them before!  The recipe came from a video that I had seen on Facebook (Here).  I did not have any bacon so I opted to trade it for a finely diced red peppers.  They puffed up when they were cooking and they were beautiful when they were cooking!!!!

So, here are the pictures from today's prep work.

12 eggs with 1/3 cup of milk.  Whipped together.
Salt and Pepper to taste


I stirred in 1/2 cup of shredded sharp cheddar cheese with about 1/4-1/3 cup of red bell peppers

Poured into the Brownie Pan and baked for 20 minutes on 375 degrees!

They LOOK AWESOME!!!!!!  Breakfast for the week is done!!!!!

Baked Egg Cups

FOODIE FRIDAY!!!!!
These are AWESOME!!!
WHOLE 30 Approved!!!!!

Baked Egg Cups
Preheat oven to 350
1/2 bell pepper (any color) diced
1/4 onion finely diced
6 mushrooms (any kind) finely diced
1 large hand-full of baby spinach leaves
12  eggs
1/3 cup of shredded cheese (optional)

Beat 12 eggs together and set aside.
Saute veggies together until tender.
Salt and pepper to taste.
Spray pan with nonstick cooking spray of choice
Divide veggies into the 12 sections and pour beaten eggs over the veggies.
Should be 1/2 to 1/3 full.  
Sprinkle with cheese if desired.
Bake approx 10 minutes or until done.
**NOT WHOLE 30 IF YOU ADD THE CHEESE**

You need a Brownie Pan?

Sunday Meal Prep!!!!!!

 Sunday Meal Prep!!!!  

Staple of Roasted Veggies!!!!
Dice up your choice of veggies
Carrots, Onions, Pepper, Zucchini, Yellow Squash, Mushrooms or any combination that you can think of.
Toss in a zip bag with a 1/4 cup of olive oil
Salt and Pepper to taste
(Add Herbs De' Provence , Taco Seasoning , Rosemary)
Any seasoning that you like!!!
Toss in bag to coat all the veggies and the seasoning is well coated on the veggies
Place on a baking sheet and roast at 425 for 25-35 minutes

ENJOY!!!!!!


Mexican Bake

1 pound of Ground Beef or Turkey
1/2 onion, chopped
1 bell pepper (any color), diced
1 clove garlic minced
1 can black beans
1 can diced tomatoes
2 Tablespoons of Taco Seasoning
3/4 cup of rice, uncooked
1 1/4  cup of water
1/2 cup salsa

Pre heat oven to 375 degrees.  Brown meat with onions, peppers, and garlic.  Place in oven safe baking dish.  Stir in black beans, tomatoes, taco seasoning, rice, water and salsa.  Mix well.  Cover and back for 1 hour and 15 minutes.  Set aside to cool.  Sprinkle with cheese when time to eat.  Add chips for a complete dinner.



Turkey Chili

1 pound ground Turkey
1 onion, diced
2 bell peppers, diced
1 can black beans
1 can pinto beans
1 can kidney beans
2 tablespoons chili powder
1 clove garlic, minced
1/4 cup ketchup
2 cans of diced tomatoes
2 cups of reduced sodium chicken broth
Salt and Pepper

Brown ground turkey with onion, garlic, and peppers.  Add in the rest of ingredients and stir well.  You can cook low and slow on the stove (couple of hours) or low and slow (6-8 hours) in a crock pot.
Serve with your favorite toppings...... cheese, avocado, chopped onions, jalapeno, chips, cornbread.


Sausage and Pasta

2 Hot Italian Sausage Links- Casing removed
1/2 onion, diced fine
1 tsp of olive oil
3 cups of Low Sodium Chicken Stock
4 1/2 ounces of pasta
Parmesan Cheese

Brown sausage with onions and olive oil.  Once browned, add pasta and chicken stock.  Cover and reduce heat to medium and cook approx 10-15 minutes until liquid is absorbed.  Sprinkle with Parmesan cheese and serve!!!!
** You can use mild Italian sausage if you prefer**


Hubby has tasted ALL of them and they are ALL Husband Approved!!!!!!!

So, What's For Dinner????

So, what have I prepared for the week????
1- Roasted Veggies- Carrots, Red Onion, Yellow Onion, Portabella  Mushrooms- Salt and Pepper and a touch of olive oil- Diced and roasted at 425 for approx 30-40 minutes!
2- Roasted Spaghetti Squash- Cut squash in half.  Brush with olive oil and salt and pepper to taste.  Turn cut side down and cook at 400 for 1 hour.  Rest for about 10 minutes and scrape with a fork!  OH MY GOODNESS!!!!!
3- Mexican Chicken- One red pepper sliced- One yellow onion sliced.  2 large chicken breast. Cover with taco seasonings and a dash of chili powder, salt and pepper.  Cover and bake at 400 for 1 hour.
Slice for burrito or taco and place in the sauce in the bottom of the pan with the pepper and onions.
4- Boiled eggs.  Some left whole and some will be deviled with a tiny bit of crisp bacon, jalapeno and small amount of shredded cheese!!!!!
5 Whole chicken thawing for homemade chicken and rice in the crock pot!!!!!  Can't wait for that.  Cook entire chicken in the crock-pot with enough water to almost cover.  Salt and pepper and cook for 8 hours on low.  Remove chicken and de-bone as well as removing skin.  Place broth and chicken in the fridge over night and skim off the fat in the morning.  When you get home, bring to a boil on the stove and add 1 1/2 cups of rice and 1 can of cream of chicken soup and 1/2 cup of milk.  Cook according to your rice directions.  Serve with crackers and ENJOY!

We also have plenty of banana's, yogurt, cottage cheese, cauliflower, refried beans, lettuce , black beans and other yummy for the week.
