Slow Cooker Tacos!!!!!!!

Slow Cooker Chicken Tacos

Bring the flavor of your favorite Mexican restaurant home with this recipe for moist and juicy Slow Cooker Chicken Tacos.

Ingredients

  • 1 cup low-sodium organic chicken broth 
  • 4 cloves garlic finely chopped
  • 2 medium jalapeƱo peppers seeded and deveined, chopped (optional)
  • 2 Tbsp. chili powder 
  • 2 Tbsp. ground cumin
  • 2 tsp. ground smoked paprika
  • ½ tsp. sea salt or Himalayan salt
  • 2 bay leaves
  • 1 lb. raw chicken breast boneless, skinless 
  • 8 (6-inch) corn tortillas warm 
  • 1 cup pico de gallo or fresh tomato salsa
  • 1 medium ripe avocado sliced 
  • 1 medium lime cut into 4 wedges 
  • ¼ cup finely chopped fresh cilantro 

Instructions

  1. Place chicken broth, garlic, jalapeƱos (if desired), chili powder, cumin, paprika, salt, bay leaves, and chicken in a 3-quart slow cooker; mix well and cover. Cook on high for 2½ to 3 hours (or on low for 4 to 5 hours), or until chicken is tender.
  2. Transfer chicken to a cutting board and shred with 2 forks. 
  3. Evenly divide chicken between 8 tortillas. Top evenly with pico de gallo, avocado, lime juice, and cilantro; serve immediately.

Week 2 of 80 Day Obsession!!!!



Well, I have successfully made it through Week 2 of 80 Day Obsession!!!
I have to admit that this week was a bit of a challenge.  Not in a bad way!!!
This week I learned several things.


Let's Get Started!!!

--You WILL figure out Timed Nutrition.  I admit that the first week was a challenge.  I was not sure how I would possibly eat all of that food I prepared but this week I found myself OUT of food by Saturday evening and throwing things together to meet my containers.  Absolutely amazing.


--You WILL and MUST challenge yourself.  I lift a lot of weights, use slider and resistance loops.  While all of that is wonderful, if I don't increase my resistance with the loops, or increase the weight of my dumbbells or pull in my abs more every time I do the exercise IT WILL NOT CHANGE OR CHALLENGE ME!!!  Is it HARD? Yes, but OH SO WORTH IT!!!!


--You MUST trust the process.  If Autumn has said it once, she has said it 100 times.  The key for me is this.  The Result pictures from the Test Group are AFTER the entire 80 Days!!!  They are not after week one.  They are not after week 2 and for sure not after only 3 weeks.  They are after the FULL 80 DAYS!!!!


-- You WILL feel different.  Yes, I actually feel different.  You feel a TON of emotions.  This is not only about your physical health but your emotional health.  You will be more confident.  You may even have a bout of tears in the middle of a workout because you are working so hard and you are so proud of yourself and how far you have come.

Week 1


January 15-January 21

First week of 80 Day Obsession.

What have I learned?

--You MUST get sleep.  I am now up at 4:30 am and the night before the launch I did NOT sleep because I was so excited, nervous and afraid I would oversleep and start off defeated before the first alarm ever went off.


--You MUST be prepared.  I did my meal prep on Sunday afternoon and was totally blown away at the amount of food I was preparing.  Are you kidding me!  Autumn you REALLY want me to eat ALL OF THIS!!!!  My kitchen looked like the day after Pampered Chef had exploded and my refrigerator looked like Rubbermaid and Tupperware had moved in.


-- You NEED the Beachbody Performance Line!  I had never used Energize and to be honest I was a little nervous.  I LOVE this stuff.  A little extra boost to help me push harder in my workouts....I'll take that!  Hydrate is incredible.  I was already using that with my running and it's so much better than the other "Hydration Drinks" that are on the market!  Recover was new for me.  Talk about helping with sore muscles and recovery......AWESOME!!!!  And the added bonus.....THEY ALL TASTE AMAZING!!!!!


--You MUST have the Resistance Loops and Slider.  I did A Little Obsessed without the "Sliders" and used paper plates.  They are ok but let me tell you that a little plastic disc can totally ROCK YOUR WORLD!  The Resistance Loops.....well they take some getting used to but do not ever underestimate a pretty little stretchy band.  You WILL cry for MERCY!!!


--You MUST trust the process.  Autumn did not just sit down and write a program because she felt like it and pull all of this information out of thin air.  She researched.  She met with other professionals. She's tested the program.  There has been a test group.  Information has been gathered and shared and edited.  This is something TOTALLY different and feels TOTALLY different but don't change what is written.  TRUST THE PROCESS!!!


--You WILL be sore.  You will find you have muscles you had no idea you had.  You will be sore in place you didn't know you would be sore.  You will fall in love with a foam roller. You will enjoy your rest day and you will learn all about self care.  You will learn to do the cool down, the warm up, and everything else that you need to become obsessed with taking care of you.

80 Day WHAT???????



So I have made it into the world that is 80 Day Obsession.  I am no longer just "A Little Obsessed" but totally obsessed!  That in and of it's self as an obsession is a good thing.  How in the world can being obsessed with anything be a good thing, you may ask?  Well, please allow me to explain.


Obsession with your health is what I am talking about here.  I made the choice, albeit a BIG CHOICE, to jump on this train of being obsessed with my health for a variety of reasons.  I had listened to Autumn share about the program.  I had listened to her share her heart about what she was doing and why.  I have done a bunch of other programs and they were all pretty intense but this one was a little different.  They are all a little different because all of the trainers are different.


I have been disciplined enough to do 22 Minute Hard Corp and the other 30 minute programs from Autumn, Shaun T and many others.  I have done P90X and believe me, those were not 30 minute workouts.  When I was hearing about 80 Day Obsession, she was discussing the length of the workouts and I can't lie, my first thought was, "Nope, that's not happening!"


The excuses followed.....

I don't have time

I'm not getting up at 4:30

I'm not crazy

I can't workout after work

Count me out of this one!!!!


But then I started listening to some of the Coach Calls that she was doing as well as seeing the results coming out of the test groups of the people who had already gone through the program.  OH MY GOODNESS!!! You have my attention NOW!!!!


I continued to listen and learn everything that I could possibly learn.  I learned about using the Beachbody Performance Line- Energize-Hydrate-Recover-Recharge.  I knew about them but not enough to REALLY know and use them.  I learned about Timed Nutrition.  Timed WHAT?  Yes, Timed Nutrition and how that was a real change for this particular program.


So I jumped in.  I jumped in as Coach.  I jumped in as a Lover of  Health and Fitness. I jumped in as a woman who wanted something BIG.  I jumped in as a woman who wanted to be obsessed with being the BEST version of that I possibly could.


January 15th was Day 1.

Today is Day 10 and I am still here!

I'm excited to share my journey so far.  10 days down and 70 to go!!!

HAPPY BIRTHDAY KALEB!!!!!

He was supposed to be born on January 8th because you don’t schedule C-Sections on Saturdays.
Momma wanted to have him on her Papa’s Birthday and it didn’t appear that was going to happen.
Baby Shower from an incredible group of women on Friday Night (1/5).
Papa and Mema coming to town on 1/6 to get everything ready!!
Best Friends Baby Shower on Saturday morning. (1/6)
Meet up with Mema and Papa at Baby’s R Us and get last minute items. (1/6)
Come back home to apartment AND I TRIP ON NOTHING IN THE PARKING LOT and GO SPLAT-BELLY FIRST!!!!! (1/6)
Get up and call the Ob’s cell number (because you work for him), and he says to meet him at the hospital for monitoring and C-Section in the morning.
He calls you back and says, “No, we deliver TODAY.”  Word got out that I fell and having Kaleb today and evidently, I had enough people in the Maternity Admissions at Women’s Hospital in Greensboro to take up half the chairs.
Kaleb arrived on the day I had prayed for.
Do I think it was an accident?
NOT A CHANCE!!!!

He has grown into an incredible young man.  He is hysterically funny and has some of the best facial expressions ever.  His laughter is contagious.  He loves Jesus.  He will do anything for you and he has the biggest heart ever!!!!  He is stepping out of his comfort zone and we are just amazed EVERY DAY!!!!!!!

WE LOVE YOU LITTLE MAN!!!!!!!!

STEP UP TO THE CHALLENGE!!!!


New Year = New Challenge

Well, it's the first week of a new year.  Can you believe it's 2018?  I'm still trying to figure out what happened to 2017.  It literally FLEW!!!!  CRAZY!!!

Usually with a New Year Celebration- the DREADED RESOLUTIONS COME!  Why do I call them DREADED?  Typically we make plans and set HUGE GOALS for the YEAR!  Something that would take 12 months to accomplish and it seems gigantic!!!!  
IT'S MAJOR!

For Example-
I want to lose 50+ pounds
I want to quite my job and work for myself
I want to run a marathon by December and I have never run before.
I want to be debt free by December.
I want more time at home
I want to succeed at work.

While these are all great, sometimes we need to back up after we set it and figure out what we need to do and what will be required to accomplish them.

This is where this CHALLENGE comes into play, especially for those that are looking to become the healthiest version of themselves through NUTRITION and FITNESS!

January 15th- 80 Day Obsession is being released.  It's a new fitness journey being lead by Autumn Calabrese, the Creator of 21 Day Fix, 21 Day Fix Extreme, Country Heat, and Co Creator of The Master's Hammer and Chisel.  This is something totally different.  Different nutrition, different equipment and crazy results.

Maybe a HUGE program that last for 80 days isn't something that you are ready to bite off.  It's a huge commitment.  Maybe you want to start with something from her other programs.  Maybe yoga is more your style due to some physical limitations.  We have a 3 week Yoga Retreat that is INCREDIBLE!  Maybe you an INSANE CARIO LOVER- there is always Shaun T at his best!  Maybe a little something that adds each week through cardio and weights that will GET YOU READY TO MAKE A SHIFT!  Shift Shop with Chris Downing will rock your world!!!!!

Most of the other programs are a bit shorter and maybe something that you might say to yourself......."I can do 21 Days."  or "I can do 30 Days"  The nutrition that goes along with the programs are INCREDIBLE!  They use the Portion Fix Containers and make it SUPER EASY!!!!!

January 15th is the start.  You have a little time to figure out what you want to do.  We start the accountability group that will totally change you!  Accountability helps you so much.  There are other women that will encourage you, celebrate with you, laugh with you, cry with you and speak truth to you!  It's a game changer!!!!!  Maybe you have tried before without support and accountability.  TRY THIS and you won't go back!!!!!!!!

Sometimes........


Well, it's that time of the year.

We have survived the holiday season with Christmas and New Years with the parties, the celebration with food, family and the kiddo's being out of school.  Does it mess with your schedule as much as it does with me?  It was  like any kind of schedule goes out the window somewhere around December 15th and then we come screeching into January and try to find our footing again.

We had a WONDERFUL Christmas and it was awesome because my parents came in to visit and Kaleb was able to stay home and visit and rest and play.  He LOVED it!!!!   He slept in and even took a nap a couple of times I think.

So now it's time to get back to what is THE ROUTINE.

I know ours is pretty consistent.

There are times when it's weird and it can really throw us for a loop.  Have you ever noticed it can be the small things.

The "Oops I forgot about this or that."

or

"It snowed last night and EVERYTHING changes"

or

There is a party or meeting that we forgot about?

We have all been there.  We have to be careful not be so focused on the schedule and enjoy those times.

Maybe we needed the snow to make us slow down.

Maybe we needed the meeting or party so we remember to have fun or listen to something new.

I'm a stickler for a schedule and DO NOT MESS with it.  I have it planned out and there is a lot I want to accomplish and when things happen, I can easily get frustrated.  I've resolved this year that I will make the most of my time.

What does that look like?

If there is a forgotten meeting- It's time for me to listen and learn!

If there is a forgotten party- It's time for me to enjoy friends and fellowship!

If there is snow- SLOW DOWN AND ENJOY IT!


It's a New Year and we are back to the GRIND.  Don't forget to enjoy the ride.  You might miss out on some true treasures!!!!

THAT TIME -Part 3-Let’s Do THIS!!!


GOALS!

We all talk about them and we can make them SO BIG we forget that we have work to do.  Sometimes we even think that they will just all happen when we wake up one morning and it's all done and we are living out what we had planned.

I had shared previously about taking a Goal and then backing it up and figuring out the steps to reach them.  Breaking them down into smaller, easier, but still require work, more manageable steps.  I wanted to share some of mine with you and what may look like to you and you can tweak your plans and tactics.  It's not hard.  It's not something that should take you an entire day.  Revise as needed and see what happens.


READY....... (I'm sharing one of mine for example)


GOAL- This year, 2018, I want to be involved in a Bible Study at all times to keep myself grounded in Him.

Seems pretty straight forward but let's think it through and what do I need to do to accomplish such a goal?

1-Pray

2-Search out what is available on-line.  I found one starting January 18 by Priscilla Shirer.

3- 7 weeks- Daily work with a video that will air on a blog from Lifeway.

4-Talk on Facebook and Instagram about what other studies that women are doing and find out if they want to join in together in a PRIVATE GROUP.

5-That will take me to Mid March and will have 2 weeks to discover my next one.

DONE!  Continue the same process every 2-3 months and before I realize it, I have been in HIS WORD for an entire year!!!!


GOAL-This year, 2018, I want to grow my business in health and fitness to match one paycheck by the end of the year.

(THIS IS A BIG ONE!)

1-Figure out how much 1/4 of my paycheck would be.

2-What would I need to do via social media, blogging, emails etc to grow my business.

3-What would be required of my time in order to accomplish this?  (30 minutes a day, 45 minutes a day etc)

4-What types or courses could I participate in that would help to educate me about being a solid Christian Business woman?

5-Lastly, most important, how would this effect and affect my family and our time together?

That is how I do it.

Break it down to every 12 weeks and figure out what you need to do in those 12 weeks and keep adding from there.  It's straight forward and I'm super EXCITED about this coming year!!!!
